A fairly somewhat flavor - Nutty, herbal and somewhat spicy with a tangy fruitiness. Firm and smooth. With a taste texture similar to good Emmental or Gruyere.
Appenzeller is a washed rind cheese traditionally made with raw milk, although many modern producers use pasteurized milk these days. The cheese is washed with a secret blend of spices with gives it an herbal aroma you don't get in other washed rind cheeses.
This is great for cooking or snacking. As far as washed rind cheese goes, this one has an aroma which is fairly mild. It certainly doesn't approach Stinking Bishop or Epoisses in pungency.
