Aged gouda is a cheese I've been gaining a greater appreciation for lately. much sweeter and more complex than the young goudas you find at the mega-marts.

We just tied the classic version rather than the magical XO version, but it was still very good. A wonderful zippy sweetness. Wonderful chewy texture. Cheesy caramel flavor. Mild but full of character.

I wish I had a cool story to tell about the Beemster, but I just don't. And perhaps that's enough. Just some casual nibbles of cheese without any bother.
